My coworker Kimberly baked me a Blueberry Betty today because I shared my homemade curried chicken with her and because she knows how much I adore blueberries. This recipe is not only delicious but also evil. It makes my brain and heart buzz.
* 1 quart fresh blueberries
* 1 tablespoon lemon juice
* 1 to 2 tsp cinnamon
* 1 cup flour
* 1 cup sugar
* 1/4 pound butter
* 1 quart vanilla ice cream
1. Preheat the oven to 375 degrees.
2. Wash the berries and drain them in a colander. Place the berries in a 1 1/2-quart casserole. Sprinkle with the lemon juice and cinnamon.
3. Sift flour and sugar together. With a pastry blender, chop in the butter until it is crumbly. Sprinkle the mixture over the berries. Bake for 45 minutes--1 hour. Serve with ice cream.
